గుత్తీ వంకాయ కుార తయారుచేయుా విధానం






Ingredients : -


1.  4-6 Brinjals

2. Ginger garlic paste - 1 tb

3. Karevepaku ( curry leaves) 

4. Kothimera ( coriander leaves) 

5. Mustard seeds 

6. Jeera

7.  Onions - 3/4 th cup

8. Green chillin -2 

9. Oil - 2 tb

10.  Lemon juice  -  1 to 1 1/2 tb  or tamarind paste if needed. 

11. Tomato pieces - 1 cup. 


To roast and powder  : -


1. Veerusenaga pappu - 4  tb

2. Coconut pieces - 2 tb

3. Coriander seeds - 1 to 2 tb

4. Jeera - 1/2 tb

5. Dalchina chekka - 1

6. Cloves ( lavangalu)  - 4

7. Red chillis - 4 to 6   or red chilli powder - 1 tb





Procedure : -




Masala powder preparation   : -  

Ee masala ki kavalisina ingredients annitini kuda separate separate ga fry chesukovali. . 


1.  First veerusengapappu and redchillis ni medium flame lo unchi roast cheyali.  

Veerusengapappu brown color ravali And redchillis crispy ga maarali. 

Redchilli powder use cheste kanuka redchillis ni use cheyalisina avasaramledhu.




2. Next pan ni low flame lo petti coriander,  jeera,  cloves,  dalichina chekka,  elachi ni roast cheyali.  Maadipokunda chusukovali. 




3. Next coconut pieces ni kuda fry cheyali. 




4. Fry chesinavanni cool ayina tarwatha vatiki 
Salt and lemon juice or tamarind paste ni add chesi kisi jar lo vesi. Mixi cheyali. Powder la vachidi. Taste bagunte Sare otherwise salt or Chillipowder or lemon juice ni add chesukovali.   Danini oka plate loki tesukoni pakana petukovali. 









5. Next Brinjals ni wash chesi diagnol ga cut chesi salt water posing oka bowl lo unchali. 

6. Cut chesi petukovali Brinjals lo pina prepare chesi petukuna masala powder ni brinjal middle lo petali. 



7. Stove medha oka pan peti kodiga oil vesi andulo mustard seeds,  jeera,  and karevepaku ni veyali. 




8. Next onions and chills ni kuda vesi brown color vachenthavaraku fry cheyali. 




9. Next ginger garlic paste ni kuda add chesi pachivasana poyenthavaraku fry cheyali.



10. Next tomato pieces,  salt,  turmeric powder and chilli powder ni kuda add cheyali. 




11. Tomatoes uudekevaraku pan pi plate peti cook cheyali.  




12. Next stuffed brinjals ni add cheyali. 



13. Kodiga Water ni kuda add cheyali gravy prepare avtundi.  Avasaramite masala powder ni kuda manam add chesukivachu ee gravy ki. 




14. Pan ni plate tho cover chesi low to medium flame lo cook chesukovali.  Madhyamadhyalo garitatho tiputa undali.  Water content kuda check chestu undali thin grave prepare ayenthavataku cook cheyali. 




15. Guthivankayalu baaga uudikayi ante skin loose ga avtay.  So salt check chesukunte saripotundi. 
 Coriander leaves tho garnish chesukovali. 




Anthe gutti vankaya kura ready


Serve this recipe with rice🍚, roti or plain biryani.
